Guilt-Free Carnival Corn Dogs

There’s nothing like the taste of carnival food to bring out the kid in all of us. However, we all know how unhealthy those tasty treats can be. Luckily, you have a delicious option right here. With this baked corn dog recipe, you can have all the fantastically fun flavor without any of the guilt!

Makes 6 corn dogs (1 per serving)
Prep Time = 7 minutes
Cook Time = 14 to 16 minutes

cooking spray
¾ cup all-purpose flour
1/3 cup yellow cornmeal
1 Tbsp. sugar or equivalent sugar substitute
1 tsp. baking powder
¼ tsp. dry mustard
1/8 tsp. salt
1/3 cup fat-free milk
1 egg, lightly beaten
1 tsp. canola oil
6 wooden skewers
6 reduced-fat frankfurters, patted dry

1. Preheat oven to 400 F. Lightly spray a baking sheet with cooking spray.
2. Using a medium bowl, combine dry ingredients: baking powder, cornmeal, flour, dry mustard, salt, and sugar.
3. Using a small bowl, combine wet ingredients: egg, milk, and oil.
4. Next, stir wet mixture into the bowl with dry mixture. Stir until just combined (batter will be thick).
5. Place ends of frankfurters on skewers. Holding the skewer tip, dip frankfurter into batter and rotate, coating evenly. Place on the baking sheet.
6. Once frankfurters are ready, bake until golden brown (approximately 14 to 16 minutes).
7. Top with mustard or ketchup and enjoy!
