Crunchy Quinoa Vegan 'Sliders' Recipe

Looking for something packed with fiber and flavor, but low in fat? Try these quinoa vegan sliders in a sandwich or along-side your favorite salad.

You Will Need
Nonstick cooking spray
2 tbsp. ground flax seeds
1/3 cup water
1 1/2 cups cooked leftover quinoa
1 cup chopped spinach
3 tbsp. all-purpose flour
1/2 cup whole grain oat flour
1/2 cup grated butternut squash
1/2 cup diced chipotles
1/4 cup sunflower seeds
1/4 cup chopped fresh basil
2 scallions, diced fine
1 clove garlic, minced
1 tablespoon tahini
1 tsp ground dried marjoram
1 tsp ground dried rosemary
1/2 tsp onion powder
1 1/2 tsp balsamic vinegar
1/2 tsp salt

Mix the flax seeds with water and set aside to thicken for a few minutes.
Preheat the oven to 425 degrees. Spray cooking spray on a large baking tray.
In a large bowl, combine the soaked flax seeds, quinoa and all other ingredients. Mix will with your hands and form them into tightly packed patties.
Lay the patties on the baking tray. Bake them for about 18 minutes, flipping them once mid-way through cooking. They should be firm, and a nice golden brown color when ready.
Remove them from the oven and allow them to rest for 5 minutes-- they'll hold together better if they're not so hot. Eat them with or without a bun.
